Bone Broth Soups You Can Make in 20 Minutes

You’ve got  a batch of delicious bone broth ready (and if you don't, click here), but if you’re in the mood for a full soup with a bone broth base, finding a recipe can be a challenge. The following four recipes are perfect for a quick, filling meal. I can promise you that testing the flavors to get them just right wasn’t such an easy process, though. My kid is probably ecstatic that we’re done having chicken soup every day for two weeks, among other things…

Beef Bone Broth Onion Soup

This is one of my favorite pick-me-ups, and a dish that the whole family eats happily. If you’re looking for a soup that will warm you on a cold day and is perfect and fresh for a warm day, this is it. Garnish with a few sprigs of your favorite fresh herbs – I use basil, parsley, scallions, or rosemary, based on what I’m craving at the moment.

This recipe serves 4-6 people.

Ingredients:

  • 8 cups of beef bone broth
  • 1 cup thinly sliced (think pho) grass-fed beef
  • 3 white or yellow onions, sliced into rounds
  • 2 tbsp. ghee
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. red wine vinegar or balsamic vinegar

How to Make It:

In a medium skillet sauté your sliced onions in ghee over medium heat. When the onions are translucent, add the salt. Continue cooking the onions until they begin to brown slightly.

On another burner, heat the beef bone broth over medium heat in a saucepan. Add the cooked onions and black pepper to the broth.

When the soup begins to boil rapidly, add our thin-sliced grass-fed beef to the pot. Serve immediately.

Cream of Mushroom Soup with Chicken Bone Broth

Another family favorite, this cream of mushroom soup is my three-year-old son’s most-requested soup. I may not have much luck feeding him Cream of Asparagus, but this dish he downs with delight.

Serve 4-6 hungry guests, and everyone will be happy.

Ingredients:

  • 8 cups chicken bone broth
  • 1 lb. sliced mushrooms
  • ½ lb. diced, cooked chicken (breast or thigh – whichever you like best!)
  • 2 diced white onions
  • 4 tbsp. ghee
  • ½ cup yogurt
  • 1 tsp. balsamic vinegar
  • ½ tsp. salt

Fooled you, didn’t I? Were you looking for cream or flour on that ingredient list? Forget them. This is a healthier alternative to traditional cream soups…start by boiling your chicken bone broth over medium heat in a medium saucepan.

In a large frying pan, sauté your onions in ½ the ghee over medium-high heat. Once they are translucent and starting to brown a little, add in the mushrooms and stir continuously.

Once the mushrooms have cooked (they’ll be about 40% smaller), add the onion and mushroom mixture to your boiling chicken broth. Add the balsamic and salt to the mix, and cook for two minutes.

Place your soup mixture in a food processor or blender that is DESIGNED FOR HOT LIQUIDS – I can’t emphasize that last bit enough. Trust me, experience is talking. Blend on high for 1 ½ minutes. If you have to divide it into batches, that’s fine.

Pour your soup back into the saucepan and add the chicken. Cook for 3 minutes then stir in your yogurt. Garnish (parsley is a great option) and devour…I mean “enjoy.”

Bone Broth-based Cream of Asparagus Soup

Ok, I admit it. I use cream in this one. Sour cream made with whole milk, from grass-fed cows. If you’ve got asparagus on hand, this easy soup could be the perfect treat. Just make sure you have a good strainer handy…

Like the rest of the soups on this list, you need between 4 and 6 hungry mouths to feed – or be prepared to store the leftovers.

Ingredients:

  • 8 cups chicken or beef bone broth
  • 1 lb. asparagus, chopped
  • 4 cups water
  • ½ cup sour cream
  • 2 tsp. salt

How to Make It:

This is an easy one. Just boil your chopped asparagus in the four cups of water until soft.

At the same time, put 2 cups of bone broth in your blender or food processor. Add ½ the asparagus and blend on high for 3 minutes. Repeat this step with the remaining asparagus.

Once all of your asparagus is blended, add the mixture to the remaining bone broth and strain it into another medium saucepan.

Bring the broth to a boil, and add the salt. Turn off the burner, stir in the sour cream, and enjoy. It’s a delightful summer soup that, although thin, is rich in flavor. To take it up a notch, garnish with a little extra sour cream, and top it with fresh parsley.

Gingered Chicken Soup with a Bone Broth Base

Looking for a way to make chicken soup less boring and more flavorful? This dish is a favorite of mine, and one of my fallbacks for days when I’m feeling under the weather. The ginger helps it go down smooth, and the chicken bone broth is amazing for its ability to cut through congestion.

I’m getting hungry just thinking about this recipe!

Can you guess how many this serves? If you said 4-6, you’re right, you trend-spotter, you.

Ingredients:

  • 8 cups chicken bone broth
  • 1 cooked chicken breast, shredded
  • 2 carrots, thin sliced into rounds
  • 3 celery stalks, diced
  • 2 potatoes, cubed
  • 3 tsp. gari (Japanese pickled ginger root)
  • 1 tsp. salt
  • ½ tsp. garlic salt

Here’s How to Make It:

Talk about good, simple food – this is the definition of it. Boil your chicken bone broth in a medium saucepan over medium-high heat. Add the carrots, celery stalks, potatoes, salt, and garlic salt.

Let that mixture cook for a bit, and after about ten minutes, add your cooked, shredded chicken breast and gari. Serve the dish immediately. It’s a filling and delightful twist on boring ol’ chicken soup.

If you really want to have a little fun with it, you can throw in some Japanese soba noodles (they’re buckwheat!), radish, or cilantro. And if you really want to go crazy with the flavor, add all of them!
