HOW LONG BEFORE MY FIRST BATCH OF KOMBUCHA WILL BE READY TO DRINK?
Your first batch of kombucha will take approximately 10-15 days to ferment or brew. You can taste test daily after about 7-10 days, or until it reaches a pH of around 3.5 or lower. There are many variables that will affect your actual brewing time, such as weather, temperature, age or matureness of your scoby, etc.
WHAT IS A SCOBY?
A scoby is an acronym for Symbiotic Culture Of Bacteria and Yeast.
MY SCOBY HASN’T RISEN TO THE TOP. WILL IT STILL FERMENT THE TEA?
Depending on a number of factors, the culture may sink, float or sit sideways. Any of these are normal and won’t affect the finished kombucha tea.
THERE’S NO BABY SCOBY. IS THAT NORMAL?
There are a few possibilities:
- If your scoby has been refrigerated for some time, it may take a couple of brewing cycles before a new scoby forms.
- Be sure not to use antibacterial soaps when cleaning your equipment. Instead, use distilled white vinegar to clean your equipment and brewing vessel.
- Make sure the starter tea is not hot as it will kill or damage your scoby.
- Check the quality of all the ingredients. Sugar, water and tea will all influence the success of your kombucha tea.
WHAT ARE KOMBUCHA BOOSTERS AND HOW ARE THEY DIFFERENT FROM KOMBUCHA TEA?
