Unique Fruit Salad with Nuts and Dried Fruit

Posted by Didi Gorman on

Our fruit salad today is an exquisite blend of sweet and sour, crunchy and juicy, earthy and delicate.

The sweetness is all natural, thanks to the apple and raisins. There’s no sugar added.

I love scooping a spoonful of this salad onto a cracker and having it as a dessert.

I recommend soaking the walnuts for a few hours and lightly roasting them before making the salad.

Preps: 10 minutes (optional fridge time: 1 hour)
Serves: 5-6

You will need:
2½ cups unsweetened raisins, soaked in water
2½ cups unsalted shelled walnut halves, soaked, lightly roasted, chopped
1 apple, cored and chopped
1½ cups red wine
A few squeezes fresh lemon
A pinch ground cinnamon

How to make it:
1. Combine all ingredients in a bowl. Mix well with a spoon.
2. Refrigerate for an hour to let the flavors set.

Go enjoy this fruity delicacy, and I will use the opportunity to wish you a wonderful weekend,
