Simple Coleslaw with light dressing, no mayo, no sugar

Because it isn’t.
This version of the iconic Coleslaw uses a light dressing based on freshly squeezed lemon juice, seasoned with salt and crushed black pepper.
We’re not going to hide the veggies behind a thick coat of sugar and mayo. Meaning, the carrot and cabbage really shine here.
The result is crisp, flavorful, exquisite, and delicate.
Surprisingly, there’s a hint of sweet-ish-ness in this salad due to the carrot’s and cabbage’s natural sweetness.
Without further ado, here is the recipe.
Preps: 5 minutes
Serves: 1
You will need:
1 carrot
1 large chunk of green cabbage
Juice from ½ - 1 fresh lemon
Salt to taste
Ground black pepper to taste
How to make it:
1. Finely shred cabbage and carrot.
2. Season with salt, pepper, and lemon. Mix. Serve.
