Rustic Caprese Salad

Fresh summer flavors anyone?

Today I’m inviting you on a culinary journey to the sunny shores of southern Italy, on the Mediterranean Sea.

This salad takes its name from the isle of Capri -where it originates- and proudly features the colors of the Italian flag. Che bello! (How beautiful!)

Juicy and fleshy tomatoes, paired with fresh sweet basil and velvety mozzarella – need I say more?

Oh, yeah, before I forget! Feel free to dunk a slice of bread in the wonderful dressing!

Here it is.

Cooking skills: none

Preps: 5 minutes
Serves: 3-4

You will need:  
A bunch cherry tomatoes, halved (or 2 regular tomatoes, sliced)
A bunch bocconcini (soft fresh mozzarella balls), sliced
A bunch fresh sweet basil leaves
A splash extra virgin olive oil
A splash high quality apple cider vinegar
A little splash freshly squeezed lemon
Salt to taste
Freshly ground black pepper to taste

How to make it:
Combine all ingredients in a bowl, season to taste, mix, and serve.
