WHY ARE THE CEREALS AND NUTS BUTTERS SOAKED? ARE THERE BENEFITS TO SOAKING THEM?
Cereal grains and nuts contain enzyme inhibitors that block certain nutrients from being absorbed. Soaking grains in an acidic medium, and nuts in warm salt water, minimizes or eliminates the negative effects of these nutrition-robbing inhibitors. This process makes grains easier to digest. It also increases the absorption of some of the vitamins and minerals in the foods we eat.
After the soaking stage the cereal is dried and mixed with the other ingredients. The nuts are dried at low temperatures to keep them truly raw.
ARE THE CEREALS GLUTEN-FREE?
As you may know oats are naturally gluten-free. However in shared facilities they can pick up traces of gluten during the rolling process from the equipment that’s also used for gluten-rich grains such as spelt, wheat or barley.
The kitchen where these cereals are made doesn’t use any gluten containing grains, which eliminates any risk of cross contamination. JoshEWEa’s Garden cereals have been tested by a third party independent lab, and have come back “gluten-free” by the labs. In fact the technical gluten levels were “<4ppm” which is the lowest rating they can give. Basically it means that any gluten remaining was lower than the lowest detectable level, and therefore “gluten-free”.
IT LOOKS LIKE GRANOLA. ARE THERE OTHER WAYS TO EAT THEM?
The cereals are delicious as a cold or hot cereal or stirred into yogurt. They are also good right out of the bag as a snack.
I DON’T SEE THE NUTRITION FACTS ON THE CEREALS.
As an artisanal food JoshEWEa’s Garden isn’t required to post the Nutrition Facts label on their products. They did have Nutrition Facts made for their Original Coconut Cereal, which has always been the most popular. Please contact us if you need a copy of it.
WHY IS THERE HONEY IN THE NUT BUTTERS?
The nut butters include locally harvested raw honey for the wonderful enzymes it contains and the natural sweetness it imparts. The honey enhances the flavor of the nut butter, giving them a taste unlike any other nut butter on the market. The honey also aids in extending the shelf life.
HOW LONG IS THE SHELF LIFE OF THE NUT BUTTER?
There is a sticker on the bottom of the nut butter jars with the ‘sell by’ date. Depending on the production date, the nut butter will be good for approximately 6 to 9 months.
SHOULD I REFRIGERATE THE NUT BUTTER? IS IT OKAY TO PUT THEM IN THE FREEZER?
It isn’t advisable to put the jars in the freezer as they were not filled to allow for the expansion of the product when freezing. The jars could possibly break if they are frozen. The best way to store the nut butters, for both short and long term, is in the refrigerator. The oils tend to get stiff when refrigerated. So it is best to set them out at room temperature for a few hours before using them. The nut butters can also be stored on the shelf, but they may not stay fresh as long as when they are kept cold.
DO YOU HAVE ANY SERVING SUGGESTIONS?
The nut butters are good as a dip for your favorite vegetables or fruits. They make a great spread on breads, toast or crackers. Another favorite for eating nut butter is the traditional way… by the spoonful.
