Easy Homemade Subway-Style Sandwich

On the menu today is a homemade Subway-style sandwich which makes for a lovely light meal all on its own.

It’s very tweakable too: you can add more vegetables if you like, or use fewer veggies, add or eliminate the cheese or the meat, use a different kind of spread; whichever way you like.

Preps: 10 minutes
Makes: 1 sandwich

You will need:
1 Kaiser Roll cut into top and bottom halves (or two slices of bread), warmed up or toasted
1-2 romaine/iceberg lettuce leaves (shredded, if you like)
2-3 thin tomato slices
2-3 thin bell pepper slices (or a few slices of pickled banana peppers)
1-2 slices ham/smoked meat/salami/prosciutto
1 slice Swiss or Cheddar cheese
1 pickled cucumber, sliced
2-3 thin onion rings, diced
Salt and cracked black pepper to taste
Mild salsa (enough to spread on one half of the Kaiser Roll)
Hummus spread/soft cheese of your choosing (enough to spread on one half of the Kaiser Roll)
An omelette/scrambled egg (made with 1 egg, a splash of milk, salt and pepper to taste, and optionally, a few dices onion – all mixed)

How to make it:
1. Spread hummus or soft cheese on the bottom half of the roll. Spread salsa on the top half.
2. Start stacking the bottom half with onion, omelette, a selection of veggies and pickles, and your choice of meat and cheese. Season to taste as you stack.
3. Top with the top half of the roll, cut in half, if you like, and serve.

Now, if you’ll excuse me, there’s a sandwich waiting for me right there on the plate, and I just can’t wait!
