Fresh & Fruity Carrot Salad

Are carrots fruits or veggies?

If you hesitated for a second, know that you’re not alone.

Carrots are a sweet vegetable almost akin to a fruit, which makes them perfect for the salad I’m going to share with you in a minute. I so totally love the twist of introducing a veggie in a fruit salad!

I said ‘fruit salad’ and immediately caught myself. Of course, this is a carrot salad, so I guess it’s technically more of a veggie salad.

But then again, it has orange and raisins too, so it really is in fact a fruit salad. Right?

I know one thing for sure, it’s fresh and light, and vibrant with color and flavor.

There’s no sugar here. The salad is naturally sweet thanks to the inherent sweetness of all the ingredients.

Special thanks to my mom who taught me this recipe when I was a child. I’ve been making it ever since, and it’s an honor and a pleasure to share it on the blog today.

Preps: 5 minutes
Serves: 3

You will need:
2 large carrots
¾ cup raisins, soaked
1 orange
Optional: a few squeezes of fresh lemon

How to make it:
1. Grate carrots into a bowl. Add the raisins.
2. Squeeze orange and add the juice and the pulp into the bowl. Squeeze some lemon on top, if desired.
3. Mix and serve cold.
