9 Veggie Fritters for a Quick Snack

They’re cute. They’re fun. They’re delicious both hot and cold, and they make for a great quick snack!

What’s more, they store easily, and they’re super convenient to take on a picnic.

Today we’re going to explore one of the most versatile and delectable side dishes out there – the veggie fritter!

A few things you need to know before we dive into the recipes:

  • It’s unbelievable how much flavor the mixture can absorb, so be very generous with the seasoning. This is key. Otherwise the fritters will come out quite plain.
  • Whenever possible I don’t peel the veggies, since I believe the skin is an integral part of the nutrients the veggie has to offer us.
    I do however, thoroughly rinse and scrub the veggies prior to cooking.
  • You will notice that I use avocado oil for the sautéing.
    The great thing about it is that it has a very high smoke point (271°C/520°F), which means it won’t burn.
    It also means it won’t sizzle that much when you sauté.
  • When you’re done sautéing, place the fritters on an absorbent paper towel to remove any excess oil.
  • Prepare to be pleasantly surprised:
    Fritters made out of beets or sweet potatoes come out quite sweet!

Now let’s get cooking!

1. Corn Fritters

Makes: 11-12

You will need:

  • 2 cups cooked corn (you can cut cooked kernels off a cob, and fluff with a fork)
  • 2 eggs
  • 13 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine corn, eggs, flour, and a generous dose of seasoning.
  2. Mix well.
  3. Form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

2. Beet Fritters

Ok, I know what you’re thinking…

But let me assure you – this is nothing short of absolutely d-e-l-i-s-h! 
So let your family have a good giggle when you serve these, and enjoy together this sweet and joyful treat!

Makes: around 30

You will need:

  • 12-15 beets (no leaves, no stems), finely grated, and squeezed
  • 3 eggs
  • 34 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes

How to make it:

  1. Combine beets, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. Form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

3. Potato Carrot Fritters

The following recipe is for potatoes and carrots mixed together – a combination that pairs really well.

However, it might tickle your fancy to experiment with each one of them separately.

If you use potatoes only:
You’re in for some yummy hash browns!

If you use carrots only:
The fritters will come out quite sweet.

And a little bonus:
After finely grating the carrots, squeeze them over a strainer and into a bowl, and ta-da!
You’ve just made some delicious carrot juice!
 

Makes: 40-45

You will need:

  • 3 carrots, finely grated, and squeezed
  • 9 potatoes, finely grated, and squeezed
  • 4 eggs
  • 34 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine potatoes, carrots, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. Form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

4. Pea Fritters

Makes: around 30

You will need:

  • 500 gr peas, steamed
  • 3 eggs
  • 14 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine peas, eggs, flour, and a generous dose of seasoning.
  2. Mix well.
  3. Form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

5. Sweet Potato Fritters

Makes: around 100

You will need:

  • 4 big sweet potatoes, finely grated
  • 7 eggs
  • 1 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine sweet potatoes, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. Form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

6. Cauliflower Fritters

Since the cauliflower is steamed in advance, these fritters come out very tender on the inside.

Makes: 70-80

You will need:

  • 2 cauliflower heads, separated into small flowerets, steamed, and mashed
  • 3 eggs
  • 23 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine cauliflower, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. With the help of a spoon, form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

7. Broccoli Fritters

Since the broccoli is steamed in advance, these fritters come out very tender on the inside.

Makes: 50-60

You will need:

  • 500 gr broccoli flowerets broken into small pieces, steamed, and mashed
  • 2 eggs
  • 23 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine broccoli, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. With the help of a spoon, form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

8. Rutabaga Fritters

Makes: around 100

You will need:

  • 1 large rutabaga, finely grated, and squeezed
  • 4 eggs
  • 34 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

 How to make it:

  1. Combine rutabaga, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. Form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.

9. Zucchini Fritters

These fritters come out very tender on the inside.

Makes: around 60

You will need:

  • 3 large zucchini, finely grated and squeezed
  • 2 eggs
  • 23 cup pure buckwheat flour
  • Avocado oil (for sautéing)
  • Seasoning:
    • Salt
    • Ground black pepper
    • Crushed dried dill
    • Dried parsley flakes
    • Ground turmeric

How to make it:

  1. Combine zucchini, eggs, flour, and a generous dose of seasoning.
  2. Mix well. (A potato masher might come in handy)
  3. With the help of a spoon, form small flat patties and sauté, both sides, in a frying pan pre-heated with avocado oil.
